Za'atar 101: what's actually in the jar?
Za'atar (زعتر) means two things. The Arabic word has been used for at least 20 herb species, all from the Lamiaceae family, which includes thyme, marjoram and oregano. It's also the name of the spice mix made with them.
What's usually in the blend
Dried herbs, ground sumac for a tangy taste, toasted sesame seeds for a nutty one, and usually salt. There's no standard recipe: shops and families each mix their own.
Three ways to eat it
For breakfast, with bread and olive oil.
Mixed with oil, spread on flatbread and baked as manakeesh.
Sprinkled over labneh, a tangy strained yogurt.
Our quick tip: dip bread in olive oil, then in za'atar. It's also good on roasted vegetables.
